Main Ingredients- 1 Chicken Breast (approx. 130-140g)
- 1/4 head Cabbage (approx. 100-120g)
- 5-6 Garlic Scapes (approx. 40-50g, optional)
- 1/4 stalk Green Onion (approx. 30g)
Cooking Instructions
Step 1
First, prepare one chicken breast (about 130-140g) for a single serving. Using fresh chicken breast will result in a more delicious stir-fry.
Step 2
Cut the prepared chicken breast into bite-sized cubes. If you cut it too small, it might lose moisture and become dry during cooking, so aim for a moderate size.
Step 3
Finely chop the green onion. Also, measure out 0.7 tablespoon (about 10g) of minced garlic to add a fragrant aroma.
Step 4
Cut the cabbage into bite-sized pieces, similar in size to the chicken breast. Garlic scapes are optional but add a unique fragrance and crisp texture to the stir-fry. Trim the lower part of the garlic scapes, removing the flower head, and cut them into manageable lengths of about 4-5cm.
Step 5
It’s important to wash the cut cabbage and garlic scapes thoroughly under running water. Place them in a bowl, cover with enough water to submerge, and gently swish them with your hands to remove any dirt. Repeat this washing process about three times. Then, drain them well in a colander. Remaining water can make the vegetables soggy when cooked.
Step 6
Heat a stir-fry pan, add the drained cabbage and garlic scapes, and drizzle in 2 tablespoons (about 30ml) of olive oil for added flavor.
Step 7
Add 1-2 pinches of salt to enhance the flavors of the vegetables. You can adjust the amount of salt to your preference.
Step 8
Now, turn the heat to medium and stir-fry the vegetables until the garlic scapes are slightly tender but still retain a crisp texture. Be careful not to overcook them until they become mushy.
Step 9
Once the garlic scapes are tender, add the cubed chicken breast and another 1-2 pinches of salt. Stir continuously with a spatula until the chicken breast turns opaque and is fully cooked. Ensuring the chicken is cooked through will make it more tender and delicious.
Step 10
When the chicken is cooked, add 1 tablespoon (about 15ml) of oyster sauce, the key to umami, and stir well to combine. Since oyster sauce brands can vary in saltiness and sweetness, it’s best to start with 1 tablespoon and adjust to your taste. Be mindful not to make it too salty.
Step 11
Time to taste! Sample the stir-fry. If you feel it needs more sweetness, add a tiny bit of sugar or corn syrup. If it tastes too bland, add a little more salt to achieve your desired seasoning.
Step 12
Finally, add the chopped green onion and minced garlic. Stir-fry quickly for about 30 seconds to infuse their aromas, then turn off the heat immediately. Overcooking at this stage can result in a raw garlic taste.
Step 13
With the heat turned off, sprinkle a pinch of black pepper for an extra layer of flavor. Adding pepper at the end preserves its aroma best.
Step 14
Lastly, sprinkle some sesame seeds for a nutty finish. Your delicious ‘Cabbage and Chicken Breast Stir-Fry’ with its satisfying crunch and tender chicken is now ready! Enjoy this healthy and flavorful meal.
