Main Ingredients

  • 1.5 handfuls Cabbage (approx. 200g)
  • 1 handful Shrimp (frozen or fresh, approx. 100g)
  • 1/2 Cheongyang chili pepper (or other mild chili)
  • 1/2 Red chili pepper
  • A little Cooking oil

Batter Ingredients

  • 2/3 cup Pancake mix (approx. 70g)
  • 1/2 cup Water (approx. 100ml)
  • 1 Egg
  • 1 Tbsp Tuna extract (or soy sauce)
  • 1 Tbsp Cornstarch (for extra crispiness!)

Cooking Instructions

Step 1

First, wash the cabbage thoroughly and pat it dry. Using a mandoline slicer or a knife, shred the cabbage as thinly as possible. Thinly shredded cabbage will absorb seasonings better and provide a more tender texture.

Peel and devein the shrimp if using fresh, then chop them into bite-sized pieces. Small shrimp can be left whole. Finely mince the Cheongyang and red chili peppers, removing the seeds. In a bowl, combine the shredded cabbage, prepared shrimp, and minced peppers. Add the pancake mix (2/3 cup), water (1/2 cup), egg, and tuna extract (1 Tbsp), then mix well to form a batter.

For an extra crispy texture, add 1 tablespoon of cornstarch to the batter and mix again until everything is evenly combined. If the batter seems too thick, you can add a little more pancake mix.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Once the pan is hot, ladle about half a cup of the batter onto the pan, forming a round fritter shape. Avoid overcrowding the pan; making them in moderate sizes will make them easier to flip and cook evenly.

Reduce the heat to medium-low and cook until the fritters are golden brown and crispy on both sides. You’ll see the edges starting to cook and crisp up. Flip them carefully and cook the other side until golden brown. Once cooked through, your delicious Cabbage Shrimp Fritters are ready!
