- 2 Tbsp vinegar
- 3 cups cooking oil (for deep frying)
- 1 egg
Special Soy Sauce Dip- 4 Tbsp soy sauce
- 1 Tbsp oligo syrup
- 1/2 Tbsp sesame seeds
- 1/2 Tbsp chopped green onion
- 1 red chili pepper (seeds removed and finely chopped)
- 1 Tbsp vinegar
- 4 Tbsp soy sauce
- 1 Tbsp oligo syrup
- 1/2 Tbsp sesame seeds
- 1/2 Tbsp chopped green onion
- 1 red chili pepper (seeds removed and finely chopped)
- 1 Tbsp vinegar
Cooking Instructions
Step 1
First, it’s important to wash the broccoli thoroughly. Fill a bowl with plenty of water, add 2 handfuls of coarse sea salt and 2 tablespoons of vinegar. Hold the broccoli upside down by the stem and gently swirl it in the water. This method helps to effectively remove any hidden insects or debris.
Step 2
Bring a pot of water to a boil. Once boiling, add a handful of coarse sea salt and 1 tablespoon of cooking oil. Add the prepared broccoli and blanch for no more than 1 minute. Immediately drain and rinse under cold or ice water to retain its crispiness.
Step 3
Drain the blanched broccoli thoroughly. Any remaining water can cause the oil to splatter when frying or prevent the batter from adhering properly. Pat it dry with paper towels for best results.
Step 4
Place about 3 tablespoons of tempura flour into a clean plastic bag. Add the dried broccoli and securely close the bag, then shake it well. This evenly coats the broccoli with a thin layer of flour, ensuring a crispier fritter.
Step 5
Now, let’s make the batter. In a bowl, combine 2 cups of tempura flour, 1 tablespoon of potato starch, 1 egg, and 1 teaspoon of salt. Gradually add about 1 cup of cold water while mixing. Avoid overmixing; a slightly lumpy batter will result in a crispier fritter.
Step 6
Coat the dried broccoli evenly with the prepared batter. Ensure a thin layer of batter covers the broccoli. If there’s any residual moisture on the broccoli, the batter might not stick well or could cause oil splattering, so make sure it’s thoroughly dry.
Step 7
Heat about 3 cups of cooking oil in a pot to 170-180°C (338-356°F). Test the oil temperature by dropping a small amount of batter; it should float to the surface immediately. Carefully add the battered broccoli and fry until golden brown and crispy. Be careful not to overcook, as it can become tough.
Step 8
While delicious on their own, a special soy sauce dip will elevate the flavor even further. Simply mix all the sauce ingredients listed above. Dipping these crispy broccoli fritters into the homemade sauce is truly an exceptional culinary experience!
