  • 400g boneless chicken thigh
  • 1 cup breadcrumbs

Seasoning Ingredients

  • 1 Tbsp curry powder
  • 2 Tbsp fried chicken powder (or all-purpose flour with a pinch of baking powder)
  • 1/2 tsp black pepper
  • 1/2 Tbsp sugar
  • 1/2 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 Tbsp salt
  • Sweet chili sauce (for dipping, as needed)
  • Ketchup (for dipping, as needed)

Cooking Instructions

Step 1

Trim any excess fat from the boneless chicken thighs. Cut the chicken into bite-sized pieces. For even cooking, try to flatten them slightly, considering they will shrink a bit when cooked.

In a bowl, combine the prepared chicken pieces with 1 Tbsp curry powder, 2 Tbsp fried chicken powder, 1/2 tsp black pepper, 1/2 Tbsp sugar, 1/2 tsp dried basil, 1/2 tsp garlic powder, and 1/2 Tbsp salt. Use your hands or gloves to gently toss and mix until the chicken is evenly coated with the marinade. Let it marinate for a few minutes.

Spread the breadcrumbs evenly on a plate. Dip each marinated chicken piece into the breadcrumbs, ensuring it’s fully coated. You can use chopsticks or your hands to press the breadcrumbs on. Place the breaded chicken pieces in the air fryer basket in a single layer. To achieve extra crispiness, brush the top of the breadcrumbs lightly with cooking oil, such as grapeseed oil.

Preheat your air fryer to 180°C (350°F) and cook for 10 minutes. This initial cooking phase helps the chicken cook through.

After 10 minutes, carefully remove the air fryer basket and flip each piece of chicken. Reduce the temperature to 170°C (340°F) and cook for another 5 minutes, allowing the chicken to become golden brown and perfectly crispy.
