As a type of Chinese cabbage, it’s a staple in Chinese cuisine and widely enjoyed in Korea. Its crisp texture and fresh flavor make it a delightful addition to any meal. Today, we’ll be making a simple yet delicious bok choy salad using Chef Baek Jong-won’s recipe. It’s sure to add a refreshing touch to your dining table.
Ingredients- 5 heads of Bok Choy
- 1/2 Tbsp Salt (for boiling water)
Seasoning- 1/2 Tbsp Minced Garlic
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Oligodang (corn syrup or similar sweetener)
- 1/2 Tbsp Vinegar
- 1/2 Tbsp Sesame Oil
- Pinch of Salt (to taste)
- 1/2 Tbsp Minced Garlic
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Oligodang (corn syrup or similar sweetener)
- 1/2 Tbsp Vinegar
- 1/2 Tbsp Sesame Oil
- Pinch of Salt (to taste)

While the water is boiling, wash the bok choy thoroughly. You can either trim the base and separate the leaves, or pull the leaves apart one by one as you wash them. Either method works well for cleaning.

Once the water is boiling, add the bok choy and blanch it for just a short time, until the leaves slightly wilt but remain crisp. Be careful not to overcook, as it can become mushy.

Immediately rinse the blanched bok choy under cold water to cool it down. This step helps maintain its crisp texture.

Drain the bok choy well using a colander. Then, to prepare it for the salad, firmly squeeze out any excess water with your hands. Removing as much water as possible is key to preventing a watery salad and ensuring the seasoning adheres well.

Place the squeezed bok choy into a mixing bowl. It’s now time to add the delicious seasonings.

Add 1/2 Tbsp of minced garlic.
