First, prepare the 6 heads of bok choy. It’s important to wash them thoroughly under running water, ensuring no dirt remains between the leaves. Soaking them in water with 2 tablespoons of vinegar for about 5 minutes helps to sanitize them and makes them even fresher.

After 5 minutes, remove the bok choy and rinse them again under clean water. Make sure to wash the inner leaves carefully to remove any remaining debris. Drain them thoroughly.

Trim a small portion of the tough bottom end of the bok choy. Then, make a cross-shaped shallow cut with a knife at the base and divide each head into 4 wedges. This allows the sauce to penetrate the leaves and keeps the bok choy looking beautiful as it cooks.
