Crispy Bean Sprouts and Flavorful Pork Belly Stir-fry
Kid-Friendly and Nutritious Bean Sprout and Pork Belly Stir-fry Side Dish
A special dinner for our child, tired from daily school and after-school activities! I quickly made this crispy bean sprout and flavorful pork belly stir-fry, which my daughter requested. It’s simple, packed with nutrients, and perfect as a side dish for rice.
Main Ingredients- 300g Fresh Bean Sprouts
- 400g Thinly Sliced Pork Belly (Daepae Samgyeopsal)
- 1/2 bunch Scallions (approx. 20g)
- 1/2 bunch Enoki Mushrooms (approx. 50g)
Seasoning Ingredients- 3 Tbsp Soy Sauce (or Braising Soy Sauce)
- 1 Tbsp Minced Garlic (generous)
- 2-3 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp Oyster Sauce
- 1.5 Tbsp Sugar (adjust sweetness to taste)
- Pinch of Black Pepper
- 1 Tbsp Toasted Sesame Seeds
- 3 Tbsp Soy Sauce (or Braising Soy Sauce)
- 1 Tbsp Minced Garlic (generous)
- 2-3 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp Oyster Sauce
- 1.5 Tbsp Sugar (adjust sweetness to taste)
- Pinch of Black Pepper
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water and drain them in a colander. Using fresh bean sprouts will help maintain their crispiness.
Step 2
Trim the base of the enoki mushrooms and separate them into strands. Wash the scallions, trim the white parts to about 3-4cm length, and the green parts to about 5cm length, preparing them into bite-sized pieces.
Step 3
Heat a wide and deep wok or pan over high heat. Once hot, add the thinly sliced pork belly and spread it out.
Step 4
Once the pork belly begins to cook slightly, arrange the washed bean sprouts, enoki mushrooms, and sliced scallions on top.
Step 5
Cover the pan with a lid and cook undisturbed over high heat for 2-3 minutes. During this step, the pork belly fat will render and naturally infuse the bean sprouts and mushrooms, adding delicious flavor. *It’s crucial to cook over high heat to prevent the vegetables from becoming soggy and to keep them crisp.
Step 6
Remove the lid, add the minced garlic, gochugaru, oyster sauce, soy sauce, sugar, and black pepper evenly. Keeping the heat on high to prevent the seasonings from burning, quickly stir-fry everything together with a spatula or chopsticks until well combined. It’s important to ensure the seasonings are evenly distributed amongst the ingredients.
Step 7
Continue to stir-fry for another 1-2 minutes until the seasonings are well incorporated with the ingredients. Finally, sprinkle with toasted sesame seeds for added nutty flavor. This finished bean sprout and pork belly stir-fry makes for an excellent meal or a hearty side dish when served with hot rice. Using bean sprouts instead of soybean sprouts offers a significantly crispier texture and richer nutrients, and the cooking time is reduced, making it an even more convenient and delicious stir-fried dish. The combination of pork and bean sprouts is not only tasty but also nutritionally excellent.
