Cooking Instructions

First, prepare about 35 strips of thinly sliced pork belly. (Refer to the amount shown in the photo).

In a large bowl, place the pork belly. Add all the prepared seasoning ingredients: 3 Tbsp gochugaru, 3 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp oligodang (or sugar), 1 Tbsp minced garlic, 1 Tbsp sesame oil, and a pinch of black pepper.

Gently mix the pork belly with your hands, separating the strips as you go, ensuring the sauce coats every piece evenly. Mix well so the seasoning is fully incorporated into the meat.

Heat a pan over high heat. Add the seasoned pork belly and begin to stir-fry. Use a spatula to separate the slices as they cook, preventing them from sticking together.

Before the pork belly is completely cooked, add the thinly sliced onion to the pan and continue to stir-fry. Cooking the onions until they become translucent will bring out their natural sweetness, enhancing the flavor.

Once the onions start to turn transparent, add the washed chives and bean sprouts to the pan. Turn off the heat and gently toss everything together using the residual heat from the pan. This technique helps maintain the crispness of the bean sprouts.
