This recipe infuses the classic with a delightful crunch from bean sprouts and a spicy kick from Korean chili peppers, creating an addictive flavor profile that will have you reaching for more. It’s a perfect twist on a familiar favorite, offering a refreshing texture and a savory, slightly fiery taste. If you happen to have leftover seasoned bean sprouts (Kongnamul Muchim), you can easily use them to speed up the process! This recipe is versatile enough for a quick snack, a delightful lunch, or even a flavorful side dish.

Ingredients

  • 28 pieces of pre-packaged Inari sushi pockets
  • 300g fresh bean sprouts
  • 4-5 Korean green chilies (adjust to spice preference)
  • 1/2 bunch chives (approx. 20-30g)
  • 3-4 bowls of cooked rice (warm)
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • Seasoning sachet from the Inari sushi kit (if included)

Cooking Instructions

Step 1

First, thoroughly wash the fresh bean sprouts under running water. In a pot, combine the washed bean sprouts, about 1/2 cup of water, and 1/2 Tbsp coarse salt. Cover and steam for about 5 minutes until the bean sprouts are tender but still slightly crisp. Once cooked, rinse them under cold water to stop the cooking process and drain them completely in a colander. If you have pre-made seasoned bean sprouts, squeeze out any excess liquid thoroughly before using.

Prepare the blanched bean sprouts, finely chopped chives, and finely minced Korean green chilies. For the chilies, if you prefer more heat, you can leave the seeds in. If making for children or a milder palate, adjust the quantity or omit them.

In a bowl with the warm cooked rice, add the drained bean sprouts, chopped chives and chilies, 1 Tbsp of sesame oil, 1 Tbsp of toasted sesame seeds, and the seasoning sachet from the Inari sushi kit (if using). Gently mix everything together with a spatula or spoon, being careful not to mash the rice grains. Ensure all ingredients are evenly distributed. Taste and adjust seasoning with a pinch of salt or additional seasoning if needed.

Gently rinse the pre-packaged Inari sushi pockets under water and lightly squeeze out excess liquid. Carefully open each pocket to create a space for the filling. Firmly pack the seasoned rice mixture into each Inari pocket, pressing gently to ensure it’s well-filled but not overflowing. Properly filling them will prevent the pockets from bursting.
