  • 5 crisp garlic scapes
  • 1/2 sweet onion

Seasoning

  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp salt
  • 1 Tbsp sesame seeds
  • 1 Tbsp sesame oil

First, wash and prepare all the ingredients. Rinse the bean sprouts thoroughly under running water and drain. Trim any yellow leaves or blemishes from the garlic scapes. Peel the onion.

Thinly slice the peeled onion into strips. Cut the garlic scapes into diagonal pieces, about 4-5 cm long. This ensures they absorb the seasoning well and are easy to eat. Preparing the ingredients to a good size makes cooking much smoother.

Place the bean sprouts in a pot and cover with plenty of water. Boil for about 3-4 minutes until they are almost cooked. When the bean sprouts are nearly done, add the prepared garlic scapes and blanch them together for just 30 seconds to 1 minute. It’s important to keep the garlic scapes crisp. Drain the bean sprouts and garlic scapes and rinse them under cold water to cool them down; this will enhance their crunchiness.

In a bowl, combine the gochugaru, salt, sesame seeds, and sesame oil. Mix the seasoning ingredients together beforehand. Pre-mixing the seasoning helps distribute it evenly when tossing the bean sprouts and garlic scapes, and makes it easier to adjust the taste.

Add the drained bean sprouts, garlic scapes, and sliced onion to the prepared seasoning. Gently toss everything together with your hands. Be careful not to overmix, as this can make the bean sprouts mushy. Ensure all ingredients are evenly coated with the seasoning.
