Jjolmyeon Noodles and Toppings

  • Jjolmyeon noodles for 2 servings
  • 1 handful of fresh lettuce
  • 1 handful of crisp cabbage
  • 200g blanched bean sprouts
  • 2 pinches of seasoned seaweed flakes
  • 2 hard-boiled eggs
  • 8 perilla leaves

Spicy and Sweet Jjolmyeon Sauce

  • 4 Tbsp gochujang (Korean chili paste)
  • 2-3 Tbsp oligodang (corn syrup) or other sweetener (adjust to taste)
  • 1 Tbsp sugar
  • 1 Tbsp maesilcheong (plum extract)
  • 1 Tbsp minced garlic
  • 2 Tbsp vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds
  • 1/2 cup cider or Fanta soda (softens the sauce)
  • 1 Tbsp gochugaru (Korean chili powder)

Jjolmyeon noodles often stick together. Gently separate them by soaking in cold water. This prevents clumping and ensures the noodles cook evenly.

Feel free to use any vegetables you have on hand! Wash the lettuce and cabbage thoroughly and slice them thinly into shreds. For the bean sprouts, quickly blanch them in boiling water for about 1 minute. Overcooking will make them mushy, so aim for a crisp texture. Immediately rinse the blanched sprouts in cold water to stop the cooking process.

The secret to delicious jjolmyeon is the sauce! In a bowl, combine the gochujang, oligodang, sugar, maesilcheong, minced garlic, vinegar, sesame oil, sesame seeds, cider (or Fanta), and gochugaru. Mix everything well until you have a flavorful sauce. The soda adds a unique touch, making the sauce smoother and enhancing its flavor.

Boil the prepared jjolmyeon noodles in plenty of water for about 2-3 minutes, or until they reach your desired chewiness. Once cooked, drain them immediately and rinse thoroughly under cold running water to remove excess starch. Drain them very well to prevent sogginess and ensure the sauce adheres nicely.

Place the drained jjolmyeon noodles in a large bowl. Add half of the prepared sauce and gently toss the noodles to coat them evenly. Be careful not to overmix, as this can break the noodles.

Now, add the prepared fresh vegetables (lettuce, cabbage, bean sprouts, and perilla leaves) to the bowl. Add a little more sauce if needed and toss everything together gently. Finish by sprinkling with seasoned seaweed flakes and topping with the sliced hard-boiled eggs. Your delicious and visually appealing jjolmyeon with bean sprouts is ready to be enjoyed!
