  • 2 handfuls of bean sprouts (approx. 200g)
  • 6 slices of thick-cut bacon
  • 4 cloves of garlic
  • 1 handful of the white part of green onions (chopped)
  • 2 bowls of cooked rice (warm)
  • 1 Tbsp olive oil
  • 1 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

First, rinse the 2 handfuls of bean sprouts in a colander under running water to remove any debris. After rinsing, it’s crucial to drain them thoroughly in the colander. This step prevents the rice from becoming watery when stir-fried and helps maintain the crispy texture.

Cut the 6 slices of thick-cut bacon into 1cm wide pieces. Peel the 4 cloves of garlic and slice them into 3-4 pieces each. Slicing the garlic thinly allows its aroma to infuse the dish subtly.

Heat a wok (or a wide pan) over medium-low heat. Add the chopped white parts of the green onions and 1 Tbsp of olive oil. Stir-fry for about 1 minute until the oil is fragrant with the scent of the green onions.

Once the green onions are fragrant, add the sliced bacon and garlic. Stir-fry over medium heat for 2-3 minutes until the bacon is golden brown and the garlic is aromatic. Cooking them thoroughly develops their flavors.

Now it’s time to add the bean sprouts. Add the drained bean sprouts to the pan, which might seem full at first. Use a spatula or scissors to cut them roughly 2-3 times as you stir-fry. Cutting them too finely might reduce their crunch.

Continue to stir-fry the bean sprouts over medium heat. Even though they fill the pan initially, they will wilt down as they cook, so don’t worry! To keep them nice and crisp, avoid overcooking. Stir-fry for only about 1-2 minutes.

Once the bean sprouts have slightly wilted, add the 2 bowls of warm cooked rice and mix gently. Break up any clumps of rice with your spatula as you stir-fry. Next, add 1 Tbsp of oyster sauce to season the rice and enhance its umami flavor.
