I used some leftover bean sprouts from making stir-fried bean sprouts and fish cakes yesterday. Actually, I saved some specifically to make fried rice. My mother asked why I was saving them instead of using them all, but I wanted to keep it a secret because I had something delicious planned! It’s not a particularly special dish, but by adding crunchy bean sprouts to regular fried rice, we’ve created a flavorful and satisfying meal. Ingredients

  • 100g fresh bean sprouts
  • 1 bowl of warm cooked rice
  • 3 cloves garlic
  • 1/3 stalk green onion
  • 1/5 carrot
  • 3 strips bacon
  • 1 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 2 Tbsp cooking oil
  • 1 pinch black pepper

Cooking Instructions

First, rinse the fresh bean sprouts thoroughly under running water to remove any dirt. Drain them well in a colander. Excess water can make the fried rice soggy.

Wash the garlic cloves and thinly slice them into about 0.3cm thick pieces. This will help release their fragrant aroma into the oil as they cook.

Wash and finely chop the green onion into pieces about 0.3cm apart. The fresh scent of the green onion will enhance the flavor of the fried rice.

Peel and wash the carrot, then finely dice it into small cubes of about 0.3×0.3cm. The sweetness and color of the carrot will make the fried rice more appealing.

Once you can smell the aroma of garlic and green onion, add the diced carrot and chopped bacon. Stir-fry until the bacon is lightly browned and the carrots are slightly tender.

When the carrots and bacon are cooked to your liking, add the drained bean sprouts and a pinch of black pepper. Stir-fry quickly. The key is to cook the bean sprouts just until they soften slightly, retaining their crispiness. Overcooking will make them mushy.

While the bean sprouts are still crisp, add the warm cooked rice (1 bowl) and oyster sauce (1 Tbsp). Gently break up any clumps of rice with your spatula and stir-fry until everything is well combined. Ensure the oyster sauce is evenly distributed.

Once all the ingredients are well mixed and glossy, reduce the heat to low. Drizzle in the sesame oil (1 Tbsp) and toss briefly to combine. Let the nutty aroma of the sesame oil infuse the entire fried rice.
