- 1 handful of fresh bean sprouts (approx. 100g)
- 1 stalk of green onion (white part mainly)
- 1/2 onion
- 1 handful of crumbled seaweed (gim)
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
Seasoning Sauce Ingredients- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp mirin (cooking wine)
- 1/2 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp mirin (cooking wine)
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. Place the washed bean sprouts in a pot, add enough water to cover them, and cover with a lid. Boil for about 6-7 minutes over medium heat until they are crisp. Be careful not to overcook them, as they can become mushy.
Step 2
Let’s make the key to delicious fried rice: the seasoning sauce! In a bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp mirin, and 1/2 Tbsp minced garlic. Mix everything well until evenly combined.
Step 3
Drain the boiled bean sprouts using a sieve to let the steam escape. Rinse them once under cold water to cool them down. This step helps maintain their crisp texture. Squeeze out any excess water thoroughly before using.
Step 4
Thinly slice the white part of the green onion and julienne the onion into similar-sized pieces. Heat a pan over medium heat, add 1-2 Tbsp of cooking oil, and stir-fry the sliced green onions and onions over medium-low heat until fragrant. Sauté until the onions become translucent and the aroma of the green onions rises.
Step 5
(Optional Ingredient Tip!) If you have king oyster mushrooms or pink sausage in your fridge, try julienning and stir-frying them along with the vegetables. This adds a richer texture and enhances the overall flavor. I added both this time, and it was truly a game-changer!
Step 6
Add the 2 bowls of warm cooked rice to the stir-fried vegetables. Gently break apart any clumps of rice with a spatula as you mix it with the vegetables, ensuring everything is well combined.
Step 7
Now, evenly drizzle the prepared seasoning sauce over the rice. Use a spatula to carefully but thoroughly mix the sauce into every grain of rice, ensuring it’s coated evenly. Proper mixing is essential for the best flavor.
Step 8
Finally, add the drained bean sprouts generously and stir-fry quickly over high heat for 1-2 minutes. It’s important to keep the bean sprouts crisp, so avoid overcooking. Stir-fry just enough to combine the rice and bean sprouts well.
Step 9
Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle a generous amount of crumbled seaweed (gim). Finish with a scattering of toasted sesame seeds for a fragrant and delicious bean sprout fried rice!
Step 10
For an even richer and more delightful experience, we highly recommend topping it with a sunny-side-up fried egg. Break the yolk and mix it into the rice for a wonderfully creamy texture!
