Crispy Bean Sprout and Seafood Pancake

A friend who lived in Vietnam mentioned they often make bean sprout pancakes there. I recently tried it myself and found it to be an extraordinary delicacy. Let me share this delightful recipe with you!
Main Ingredients- 100g bean sprouts
- 10 medium shrimp, peeled and deveined
- 2 fresh shiitake mushrooms
- 1 cup pancake mix (or all-purpose flour)
Dipping Sauce Ingredients- 2 Tbsp soy sauce
- 1/2 tsp sesame seeds
- 1/2 tsp vinegar
- 1 tsp chopped green onions
- 1/2 tsp red pepper flakes (gochugaru)

Cooking Instructions
Step 1
First, prepare the ingredients for the pancake. Rinse the bean sprouts and pat them dry. Thinly slice the shiitake mushrooms. Peel and devein the shrimp, then cut them in half lengthwise.

In a bowl, combine 1 cup of pancake mix with 1 cup of water. Gradually add another 1/3 cup of water, mixing to form a batter. You should use about 1 and 1/3 cups of water in total.

Using chopsticks, gently mix the batter until just combined. Avoid overmixing to maintain the crispiness of the bean sprouts.
Step 4
Add the prepared bean sprouts to the batter and gently toss them, just enough to coat them lightly. The moisture from the bean sprouts will help create a good consistency, so don’t make the batter too thick.
Step 5
Add the sliced shiitake mushrooms and prepared shrimp. Mix gently again, ensuring not to break the ingredients.
Step 6
Heat a generous amount of cooking oil in a non-stick pan over medium heat. Pour the entire batter mixture into the pan and spread it out evenly. This pancake is best when made a bit thicker than typical kimchi or zucchini pancakes. Cook slowly on one side until golden brown and crispy.
Step 7
Carefully flip the pancake and cook the other side until it is also golden brown and cooked through. Your delicious crispy bean sprout and seafood pancake is now ready!
Step 8
Once cooked, cut the pancake into 8 pieces using kitchen scissors. Serve immediately with the prepared dipping sauce on the side. Dipping a piece into the sauce enhances the flavors.

Tip: For an even more unique taste, try adding thinly sliced squid to the batter along with the bean sprouts.
