This is a super simple green bean recipe introduced by Chef Rachael Ray on FoodNetwork’s ’30 Minute Meals’. It’s packed with the savory flavor of bacon and a delightful sweet and tangy finish, making it a perfect side dish that will surely whet your appetite!
Main Ingredients
- 1 pound (450g) fresh green beans – Trim the ends and wash them thoroughly.
- 6 strips thick-cut bacon – Cut into bite-sized pieces (about 1-2 cm).
Seasoning & Others
- 2 Tbsp olive oil – Enough to coat the pan.
- 1 tsp black pepper – Freshly ground pepper adds a wonderful aroma.
- 1/4 cup cider or red wine vinegar – The acidity cuts through richness. (Apple cider vinegar can be substituted)
- 2 tsp sugar – Balances the vinegar’s tartness and adds a touch of sweetness.

Cooking Instructions
Step 1
First, prepare your fresh green beans. Use kitchen shears or a knife to trim off the tough ends of each green bean. Wash them thoroughly under running water, then drain them well. Pat them dry with paper towels or let them air dry in a colander, as excess moisture can cause splattering and a less desirable texture.
Step 2
Heat a large, deep skillet over medium-high heat. Add the 2 tablespoons of olive oil and swirl to coat the bottom of the pan. Let the oil heat up for a moment until it shimmers, but be careful not to let it smoke.
Step 3
Add the chopped bacon to the hot skillet. Sprinkle with 1 teaspoon of black pepper as it cooks. Sauté the bacon, stirring occasionally, for about 5 minutes, or until it’s nicely browned and crispy, rendering its delicious fat. Don’t let it burn!
Step 4
Once the bacon is cooked to your liking, add the drained green beans directly to the skillet with the bacon and rendered fat. Continue to stir-fry for another 3-5 minutes over medium-high heat. The goal is to cook the green beans until they are tender-crisp and still bright green – don’t overcook them!
Step 5
Finally, it’s time to add the tangy and sweet glaze. Pour in the 1/4 cup of cider (a fermented apple juice beverage) or red wine vinegar, and sprinkle in the 2 teaspoons of sugar. Toss everything together quickly to coat the green beans and bacon evenly. If you don’t have red wine vinegar, apple cider vinegar is a great substitute. Cook for another minute until the sauce thickens slightly and coats everything beautifully. Remove from heat and serve immediately. Enjoy this delightful dish warm!
