Ingredients

  • 1 handful fresh spinach (approx. 100g)
  • 2 slices bread
  • 4 strips thick-cut bacon
  • 1 pinch salt
  • 1 tablespoon cream cheese
  • Shredded mozzarella cheese or your favorite cheese, to taste
  • Pinch of black pepper
  • 4 fresh eggs
  • 1 Tbsp unsalted butter
  • Pinch of dried parsley flakes (for garnish)

First, melt 1 tablespoon of unsalted butter in a pan over medium-low heat. Be careful not to burn the butter and stir gently until it’s smooth.

Add a handful (about 100g) of fresh spinach, washed and patted dry, to the pan. Spinach wilts down considerably, so chopping it into 1/2 or 1/3 pieces beforehand makes it easier to sauté. Add a pinch of salt to enhance the spinach’s savory flavor and stir-fry.

Once the spinach starts to turn vibrant green and wilt, add 1 tablespoon of cream cheese and continue to sauté. Use chopsticks or a spatula to break up and mix the cream cheese until it’s well incorporated with the spinach.

When the spinach is fully cooked, its color deepens, and it’s well combined with the cream cheese, the sautéed spinach is ready. Set it aside to cool slightly.

Using a round cookie cutter or a cup with a diameter of about 4-4.5 cm, cut out the center of each bread slice. (You can use the cut-out bread for other dishes!) Wrap each bread ring with bacon slices, overlapping them slightly to secure. You can lightly pan-fry the ends of the bacon to help them stick together, or use a toothpick to hold them in place.

Generously fill the center of each bacon-wrapped bread ring with the prepared cream cheese and spinach mixture. Avoid overfilling, as it might cause the egg to spill out.

Now, sprinkle your preferred cheese generously over the filling. Mozzarella or Colby Jack cheese works wonderfully, adding a delicious cheesy richness.

Carefully crack one fresh egg into the center of each prepared bread cup. Try not to break the yolk.

Bake in a preheated oven or air fryer at 180°C (350°F) for 10-12 minutes. This timing should result in a perfectly soft-boiled egg. If you prefer your eggs fully cooked, bake for an additional 13-15 minutes.
