  • 1 egg

Cooking Instructions

Step 1

Hello everyone! Today, I’ll be sharing a recipe for Ae-hobak Jeon, a beloved Korean snack that everyone enjoys. It’s fantastic as a side dish for kids or as a savory accompaniment with drinks for adults. I’ll reveal the secrets to making them perfectly crispy on the outside and wonderfully moist on the inside!

Step 1

Step 2

First, wash the zucchini thoroughly and pat it dry. Then, slice it thinly into julienne strips. Cutting them too thick will increase cooking time and affect the texture, so thin slicing is key. Place the julienned zucchini in a bowl. Now, let’s make the batter: combine 1/2 cup of pancake mix with 1/3 cup of water, stirring until smooth without any lumps. It’s important to adjust the consistency so it’s neither too watery nor too thick. Add a pinch of salt to subtly enhance the zucchini’s flavor, and finally, whisk in 1 egg to complete the delicious batter.

Step 2

Step 3

Heat a pan over medium-high heat and add a generous amount of oil. Spread the prepared zucchini batter thinly onto the pan. Cooking over medium-low heat rather than high heat will ensure they cook evenly and don’t burn. Once one side is golden brown, flip them over and cook the other side until equally golden. You can gently press them with a spatula to make them even crispier.

Step 3

Step 4

Once both sides are beautifully golden brown and cooked through, arrange the Ae-hobak Jeon attractively on a plate. You’ve now created delicious, crispy-on-the-outside, moist-on-the-inside zucchini pancakes! They are best enjoyed immediately while warm. Try serving them with a sweet and tangy soy dipping sauce!
