Ingredients
  • 2 handfuls of anchovies (for soup base, about 60-80g)
  • 0.5 Tbsp minced garlic
  • 2 dried or fresh chilies (optional)
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp cooking oil

Cooking Instructions

Step 1

Heat 1 Tbsp of cooking oil in a pan over medium heat. Be careful not to overheat the pan, as this can cause the anchovies to burn.

Step 2

Add the 2 handfuls of anchovies to the pan and stir-fry them over medium-low heat until they are lightly golden and crispy. This step helps to remove any fishy smell and bring out their nutty flavor. Keep stirring to prevent burning.

Step 3

Once the anchovies are golden, add 0.5 Tbsp of minced garlic and 2 dried or fresh chilies (if using). Stir-fry everything together for about 3 minutes until fragrant. The chilies add a nice kick, but you can omit them if you prefer.

Step 4

Turn off the heat completely. This is the key step! Allow the residual heat of the pan to do the work. Add 3 Tbsp of oligosaccharide and gently toss everything together until the anchovies, garlic, and chilies are well coated. Stirring gently over residual heat prevents the anchovies from clumping or hardening, keeping them deliciously crisp and slightly chewy. And voilà – your simple and delicious stir-fried anchovies are ready! Easy, right?
