  • 1 Tbsp Sugar
  • 3 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Plum Extract (Maesil Cheong)
  • 1 Tbsp Ground Sesame Seeds
  • 1 Tbsp Sesame Oil

Cooking Instructions

Step 1

Begin by preparing the fresh spring cabbage.

Step 2

Remove any yellow or wilted outer leaves from the spring cabbage. Trim the tough root ends with a knife. If the leaves are very large or tough, cut them into 2-3 pieces or chop them into approximately 4-5 cm lengths for easier eating.

Step 3

Rinse the prepared spring cabbage thoroughly under cold running water. It’s important to wash the root area well to remove any soil. After washing, drain the cabbage well in a colander. Excess water can dilute the dressing and make the salad less flavorful.

Step 4

Thinly slice the onion. Wash the green onions and cut them into 3-4 cm lengths. If you don’t have green onions, chives can be a good substitute.

Step 5

Now, it’s time to mix the dressing with the drained spring cabbage. This recipe skips the salting step and mixes everything fresh. In a bowl, combine the spring cabbage, minced garlic, gochugaru, sugar, plum extract, anchovy sauce, and soy sauce. Add the sliced onions and green onions. Gently toss and mix everything together, ensuring the dressing coats the cabbage leaves evenly. Be gentle to avoid bruising the leaves.

Step 6

Once the seasonings have started to meld with the cabbage, add the ground sesame seeds and sesame oil. Give it a final gentle toss. Taste the salad and adjust the seasoning if necessary. If it’s too bland, add a tiny bit more anchovy sauce, but be careful not to add too much, as it can become too salty. Adjust to your preference.
