Crispy and Sweet Raw Sweet Potato Salad Recipe

Essential Ingredients- 1 medium-sized sweet potato
- 5cm green onion
- 5cm carrot
- 1/4 onion
- 2 Tbsp red pepper flakes
- 1/2 Tbsp salt (kosokum)
- 1 Tbsp oligodang (corn syrup)
- 1 Tbsp plum extract
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, peel the sweet potato and then julienne it into thin, fine strips. Raw sweet potatoes can be quite firm, so it might require some effort to julienne. The thinner you slice them, the crispier the texture of the salad will be, resulting in a much more delicious dish.
Step 2
Place the julienned sweet potato in cold water to remove excess starch. We’ll also lightly season it at this stage. Add 1/2 Tbsp of kosokum (a type of coarse salt) and let it soak for about 10 minutes. After soaking, drain the sweet potato, rinse it under cold water, shake off the excess water thoroughly, and place it in a bowl.
Step 3
While the sweet potato is soaking, you can save time by preparing the other vegetables. Julienne the carrot and onion as thinly as the sweet potato. Slice the green onion diagonally. If you’re using frozen green onion, it might be difficult to julienne, so slicing it diagonally is recommended. If you’re using fresh green onion, you can julienne it like the other vegetables.
Step 4
Now, let’s start mixing the sweet potato salad. In a large bowl, add the julienned sweet potato. Then, add the prepared carrot, onion, and green onion to the bowl.
Step 5
Next, let’s add the seasoning that will make the salad delicious. Add 2 Tbsp red pepper flakes, 1/2 Tbsp salt, 1 Tbsp oligodang, 1 Tbsp plum extract, 1 Tbsp sesame oil, and 1 Tbsp vinegar. Mix everything well with the vegetables.
Step 6
Put on clean disposable gloves and gently toss everything together until the seasoning is evenly distributed. Your crispy and sweet raw sweet potato salad is now complete! It’s delicious to eat right away, or even better when chilled in the refrigerator.
