Easy Carrot Pizza Pancake Recipe: Perfect for Rainy Days, Wine/Beer Snacks!
Today, I’ve made a crowd-pleasing ‘Carrot Cheese Pancake’ using sweet carrots. With its crispy exterior and chewy interior, enhanced by the rich flavors of cheese, bacon, and garlic, it’s a perfect companion for wine or beer, and a guaranteed hit as a snack for children. Here’s a super simple carrot pizza pancake recipe you can make at home in no time!
Main Ingredients- 2 medium carrots
- 1 bag pizza cheese (approx. 150g)
- 2 strips bacon
- 10 cloves garlic (minced or sliced)
- 3 Tbsp potato starch or cornstarch
- 3 Tbsp cooking oil (for pan-frying)
- A pinch of grated Parmesan cheese
- 1 slice of processed cheese (optional, for extra richness)
Cooking Instructions
Step 1
First, prepare all the ingredients for the pancake. Gather fresh carrots, flavorful bacon, aromatic garlic, and savory cheese.
Step 2
Mince the garlic or slice it thinly, according to your preference. Cut the bacon into thick strips, about 1cm wide, to ensure a satisfying texture.
Step 3
Heat 1 Tbsp of cooking oil in a pan over medium-low heat and gently fry the garlic slices until golden brown. Be careful not to burn the garlic; cook until fragrant. Transfer the fried garlic to a paper towel to drain excess oil. This step adds a sweet and nutty flavor.

In the same pan, add the bacon strips and cook over medium-low heat until nicely browned and slightly crispy. Place the cooked bacon on a paper towel to absorb any excess grease. Crispy bacon will add a delicious savory note to your pancake.

Wash the carrots thoroughly, peel them, and then julienne them into very thin matchsticks. The thinner the matchsticks, the crispier and more tender the pancake will be.

Cook one side over medium-low heat until golden brown and crispy, then flip and cook the other side until golden brown as well. Create two thin carrot pancakes. This makes it easy to fold or top later.
