Unlike traditional methods, these sprouts are stir-fried directly without pre-boiling, preserving their wonderful crispiness and unique nutty flavor, making them an instant rice companion. The spicy and sweet seasoning is perfect for mixing with rice!
Main Ingredients- 180g bean sprouts
- 1 green onion
- A little cooking oil
Seasoning- 1 Tbsp minced garlic
- 1 Tbsp anchovy sauce
- 1 Tbsp oligodang (corn syrup)
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
First, finely mince the green onion that will be used for making the scallion-infused oil. You can use both the white and green parts for maximum flavor.
Step 2
Heat cooking oil in a pan and add the minced green onion. It’s crucial to cook this over low to medium-low heat, not high heat. This slow cooking process prevents the green onion from burning and allows it to become golden brown, infusing the oil with a delicious aroma.
Step 3
Once the green onion turns a tempting golden color, add the washed bean sprouts to the pan, ensuring they are well-drained. Stir-fry them quickly with the infused oil. The key is to keep the bean sprouts crisp, so don’t overcook them at this stage.
Step 4
As the bean sprouts begin to soften slightly, add all the prepared seasoning ingredients (minced garlic, anchovy sauce, oligodang, cooking wine, gochugaru). Stir-fry everything together quickly to ensure the seasoning evenly coats the bean sprouts.
Step 5
When the bean sprouts have reached your desired tenderness and the seasoning is well incorporated, taste the dish. If it’s too bland, add a tiny bit more anchovy sauce or salt.
