  • 10 Fresh Shrimp
  • Frying powder, as needed
  • Panko breadcrumbs, as needed
  • 1 Egg
  • 1 Egg white
  • 2 Tbsp Cornstarch

Cooking Instructions

Step 1

Prepare 1 block of tofu. Pat it thoroughly dry with paper towels, then slice it into 1.5 to 2 cm thick pieces. Drying the tofu well is crucial to prevent oil splattering and ensure maximum crispiness when frying.

Step 2

Peel and devein the fresh shrimp, then finely mince them. In a bowl, combine the minced shrimp, egg white, 2 Tbsp cornstarch, a pinch of salt, a pinch of pepper, and 1 tsp of butter for added tenderness. Mix well until the mixture becomes cohesive and sticky, forming the shrimp filling.

Step 3

Shape the shrimp filling into flat, round patties, suitable for placing between tofu. Place a shrimp patty onto a slice of tofu and cover it with another slice of tofu to create a sandwich. Ensure the shrimp filling is slightly smaller than the tofu slices to prevent it from oozing out during frying.

Step 4

Lightly and evenly coat the tofu sandwiches with frying powder on all sides. This helps the egg wash adhere better, making it easier to coat with panko breadcrumbs.

Step 5

In a separate bowl, whisk 1 egg to prepare the egg wash. Place a generous amount of panko breadcrumbs on a wide plate. Dip the fried powder-coated tofu sandwiches into the egg wash, then thoroughly coat them with panko breadcrumbs. Press the breadcrumbs firmly to ensure they stick well for an extra crispy finish.

Step 6

Heat a generous amount of cooking oil in a pot to about 170°C (338°F). Carefully place the prepared tofu menbosha into the hot oil. Fry over medium heat, turning occasionally, until golden brown and crispy. Frying time varies depending on the size, but typically takes about 3-4 minutes.

Step 7

Once fried to perfection, transfer the tofu menbosha to a plate lined with paper towels to drain excess oil. Serve immediately while warm for the best crispy and soft texture. They are also delicious served with sweet chili sauce or ketchup according to your preference.
