Main Ingredients- 3 cucumbers (medium size)
- 1/2 stalk of green onion (mainly the white part)
- 1 Tbsp minced garlic
- 1.5 Tbsp sesame oil
- 2 Tbsp salt (for salting cucumbers)
- 1 Tbsp whole sesame seeds or ground sesame seeds
Cooking Instructions
Step 1
Wash the fresh cucumbers thoroughly under running water. The skin contains many nutrients, so washing them clean is essential.
Step 2
Slice the cucumbers thinly, about 0.3 cm thick. If they are too thick, the seasoning won’t penetrate well; if too thin, they might become mushy. Slicing them to an appropriate thickness is key. Half-moon or round shapes are both fine.
Step 3
Place the sliced cucumbers in a large bowl and sprinkle with the 2 tablespoons of salt. Gently mix them. Salting the cucumbers draws out moisture, which helps maintain their crispiness. Let them sit for about 10 to 15 minutes.

Discard the water that has been drawn out from the salted cucumbers. Squeeze the cucumbers firmly with your hands to remove as much excess water as possible. If too much water remains, the salad can taste bland. Squeezing out the water is crucial for achieving a crisp texture.
Step 5
To the bowl with the squeezed cucumbers, add 1 tablespoon of minced garlic, 1.5 tablespoons of sesame oil, and 1 tablespoon of whole or ground sesame seeds. Finely chop the green onion and add it. If you like, you can add a tiny bit of sugar or vinegar to your preference, but today we’ll stick to the basic recipe.
