  • Zucchini: 2/3 to 1 medium (adjust based on size)
  • Pancake mix (Buchim Garu) or All-purpose flour: 3 ladles (leveled)
  • Water: 3.5 ladles
  • Egg: 1 large
  • Salt: A pinch
  • Cooking oil: Generous amount

Cooking Instructions

First, wash the zucchini thoroughly. Prepare about 2/3 to 1 medium zucchini and julienne it into thin strips. Aim for a thickness of about 3mm; if they’re too thick, they’ll take longer to cook.

Now, let’s make the delicious batter. In a bowl, add 3 leveled ladles of pancake mix (or all-purpose flour). If you tend to scoop generously, use 2 ladles instead. Pour in 3.5 ladles of water. Crack in 1 large egg and add a small pinch of salt. Be careful not to oversalt, as you can always dip the pancakes in soy sauce later to adjust the seasoning. Whisk everything together with a whisk or chopsticks until well combined. The batter should be pourable and have a smooth, slightly runny consistency.

Add the julienned zucchini to the prepared batter and gently mix to coat the zucchini evenly. This amount of batter should be sufficient to make about 2 medium-sized zucchini pancakes.

Heat a pan over medium heat and add a generous amount of cooking oil. I find that frying the pancakes makes them extra crispy and delicious! If the oil isn’t hot enough, the pancakes will absorb too much oil, so maintain a medium heat for best results.

Pour the batter onto the hot pan, shaping it into round pancakes. Cook until the bottom is golden brown and crispy. It’s important to cook them patiently to ensure the batter is cooked through. Gently shake the pan to check if the pancake is loosening; if it is, it’s ready to be flipped.
