Quick and Easy Zucchini Pancakes from Leftover Zucchini!
Have some zucchini leftover from making stew? Don’t let it go to waste! Make these crispy and savory zucchini pancakes with simple ingredients. They’re perfect as a snack for kids, an appetizer with drinks, or a satisfying side dish.
Zucchini Pancake- 1/2 medium zucchini
- 1 cup pancake mix (using a standard Korean paper cup measure)
- 1 large egg
- Water (for batter consistency, approximately 1/2 cup)
Cooking Instructions
Step 1
First, thoroughly wash the zucchini. Then, thinly julienne it to avoid making the slices too thick. Aim for a thickness of about 0.3 cm for the best texture when fried. (You can also cut it thicker if you prefer.)
Step 2
In a wide bowl, combine 1 cup of pancake mix (measured with a standard Korean paper cup) and 1 large egg. Gradually add water, little by little, while mixing to create a batter. The batter should not be too runny; it should be slightly thick so that the zucchini strips are well coated. (Approximately 1/2 cup of water is usually sufficient, but adjust based on the type of pancake mix you are using.)
Step 3
Add the julienned zucchini to the bowl with the batter. Gently mix everything together using chopsticks or a spatula, ensuring that each zucchini strip is evenly coated with the batter. Be careful not to break the zucchini while mixing.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Spoon portions of the zucchini and batter mixture onto the hot pan, shaping them into rounds or elongated ovals. It’s best to spread them to a moderate thickness, as overly thick pancakes might not cook through completely.
Step 5
Cook one side over medium-low heat until golden brown. Then, carefully flip the pancakes using a spatula and cook the other side until it’s also golden brown. Once both sides are beautifully golden, they are ready to be removed from the pan.
Step 6
Arrange the well-cooked zucchini pancakes on a nice serving plate to complete the dish! They taste best when served warm and extra crispy.
