Step 1
Prepare 1kg of peeled sweet potato stems. First, thoroughly peel the stems and rinse them several times under running water to remove any dirt or debris. (Buying pre-peeled stems from the market can be more convenient.)

Fill a pot with plenty of water and add 2 tablespoons of coarse sea salt. Bring the water to a rolling boil. Adding coarse sea salt helps maintain the crispiness of the sweet potato stems.

Once the water is boiling, add the prepared sweet potato stems and blanch them very quickly for about 30 seconds. Be careful not to overcook them, as they can become mushy. Blanching them briefly is key.

Immediately remove the blanched sweet potato stems and rinse them under cold running water. This rapid cooling helps preserve their crunchy texture.

Cut the sweet potato stems into bite-sized pieces, about 4-5cm in length. If they are too long, the seasoning might not penetrate well, and if they are too short, they might lack a satisfying chew.

Wash the 2 red chili peppers, remove the stems, and slice them diagonally about 0.5cm thick. This adds color and a hint of spiciness.

Peel and thinly slice 1/2 onion. The natural sweetness of the onion will enhance the overall flavor of the kimchi.

Now, let’s make the delicious kimchi seasoning. In a large bowl, combine 6 Tbsp gochugaru, 3 Tbsp minced garlic, 8 Tbsp plum syrup, 6 Tbsp fish sauce, and 3 Tbsp salt. Mix them well to create the seasoning base.
