  • Dried shrimp (Bori Saeu) 5 cups
  • Whole garlic cloves 1 handful
  • Red chili pepper 1
  • Green chili pepper 1

Thinly slice the whole garlic cloves. If the garlic cloves are large, you can cut them into 2-3 pieces before slicing. You can adjust the amount of garlic to your preference.

Remove the stems from the red and green chili peppers, wash them, and slice them thinly on an angle or chop them. If you enjoy a spicier kick, feel free to increase the amount of green chili peppers.

Gently shake the dried shrimp in a sieve to remove any dust. Place the dried shrimp in a dry pan over very low heat and stir-fry for 2-3 minutes without adding any oil. This step helps to remove excess moisture, making the shrimp crispier and enhancing their nutty flavor.

Remove the dried shrimp from the pan and set them aside. Add 2-3 Tbsp of cooking oil to the same pan. Add the sliced garlic and stir-fry over medium-low heat until the garlic turns golden brown and fragrant. Sautéing the garlic well is key to developing its aromatic oil.

Once the garlic is lightly browned, add the sliced red and green chili peppers to the pan and stir-fry briefly. Cook just until the chili peppers soften slightly.

Create the sauce by adding 4 Tbsp of soy sauce, 1 Tbsp of sugar, and 2 Tbsp of oligosaccharide directly into the pan. Stir well and let it simmer for a moment until the sugar dissolves and the sauce slightly thickens.

Return the pre-stir-fried dried shrimp to the pan with the sauce. Reduce the heat to low. It’s important to cook over low heat to prevent the sauce from burning.

Stir-fry quickly over low heat, ensuring the shrimp are evenly coated with the sauce. The shrimp will become glossy and aromatic as they absorb the flavors. Keep stirring continuously to prevent sticking or burning.
