  • 15 almonds
  • A little cooking oil

Before stir-frying, heat a dry pan over medium heat. Add the small dried anchovies and toast them until they become slightly translucent. This step removes any fishy smell and impurities, making the anchovies crispier. Toast for about 1-2 minutes.

Push the toasted anchovies to one side of the pan. Add a little cooking oil to the empty space and lightly stir-fry the anchovies again. This enhances their nutty flavor. Stir-fry quickly over medium-low heat to prevent burning.

Add 1 tsp soy sauce, 1 tsp sugar, 1g oligosaccharide, and a pinch of sesame seeds to the pan. Stir over medium-low heat, ensuring the seasoning coats the anchovies evenly and doesn’t burn. Stir-fry for about 1-2 minutes. If you don’t have oligosaccharide, you can substitute it with corn syrup.
