  • 1 cup water (approx. 200ml)

  • Vegetable oil, for frying

Cooking Instructions

Step 1

Today, I’m sharing a recipe for a potato pancake that’s crispy on the outside and tender on the inside – a favorite for everyone! It’s simple yet guaranteed to be delicious. Shall we get started?

Step 2

First, prepare 7 potatoes. Peel them, wash thoroughly, and then thinly julienne them into about 2-3mm thick strips. Lightly rinsing the julienned potatoes can help remove excess starch, leading to a crispier pancake. After draining the potatoes, add 2 tablespoons of pancake mix, 3 finely chopped Cheongyang chili peppers (you can omit these if making for children or if you prefer less spice), 1 cup of water, and 1 teaspoon of salt. Mix everything well until all ingredients are evenly combined. It’s important that the pancake mix absorbs the potato’s moisture, creating a batter that isn’t too watery but has a suitable consistency.

Step 3

Heat a generous amount of vegetable oil in a pan over medium-low heat. Spoon portions of the potato mixture into the pan and spread them into round shapes. Cook for about 3-4 minutes until the bottom side is golden brown. When the edges start to turn slightly brown, flip the pancake and cook the other side for another 3-4 minutes, ensuring it’s golden brown and cooked through. Flip and cook on both sides until evenly golden and cooked through.

Step 4

And there you have it – a spicy, crispy, and savory potato pancake! It’s best enjoyed while warm. If you’re serving this to children or prefer a milder taste, simply omit the Cheongyang chili peppers for a dish that everyone can enjoy. Enjoy your delicious creation!
