Ingredients
- 4 medium potatoes
- 3 eggs
- 5 strips of bacon
- Salt, to taste

- 1-2 Tbsp pancake mix (or all-purpose flour)

Step 1
Wash the potatoes thoroughly and prepare them with the skin on. The skin adds flavor and a pleasant texture. First, thinly slice the potatoes, then cut them into julienne strips. Aim for uniform thickness so they cook evenly.

To achieve a crispier texture, it’s important to remove excess starch from the julienned potatoes. Soak them in cold water for about 10 to 20 minutes. After soaking, drain the potatoes well in a colander.

Prepare 5 strips of bacon. Feel free to increase the amount if you love bacon! Cut the bacon into thin strips, similar in width to the potato juliennes. This ensures the bacon and potato meld together beautifully.

In a bowl, combine the drained potato strips and the julienned bacon. Season generously with salt and pepper. Add 1 to 2 tablespoons of pancake mix (or all-purpose flour) to help bind the ingredients and make the pancake extra crispy. Mix everything together thoroughly. Adjust the amount of flour based on the moisture content of your potatoes.

Heat a skillet over medium heat and add a generous amount of cooking oil. Spread the seasoned potato mixture onto the pan, shaping it nicely.
