  • 3 Tbsp perilla oil
  • 2 Tbsp anchovy sauce (or fish sauce)
  • 1 tsp salt

Cooking Instructions

Step 1

First, prepare 1kg of boiled Petasites hybridus. While using freshly boiled petasites will yield the best flavor, using pre-boiled ones is a convenient option.

Step 2

If the petasites stems are thick, split them in half lengthwise. This helps the seasoning penetrate better and makes them easier to eat.

Step 3

Cut the prepared petasites into bite-sized pieces. Cutting them into manageable pieces ensures that even children can enjoy this dish comfortably.

Now, let’s prepare the seasoning. In a bowl, combine 3 Tbsp of perilla oil, 2 Tbsp of minced garlic, 2 Tbsp of anchovy sauce, and 1 tsp of salt. Mix well. Using anchovy sauce adds a depth of umami flavor to the dish.
