Step 1
First, since we’ll be using the sweet potato skins, wash them thoroughly under running water using a brush to remove all dirt. The skins are nutritious and add a lovely savory flavor when fried.

After washing the sweet potatoes, lightly pat them dry, then use a slicer or a vegetable peeler to cut them into very thin slices. The thinner the slices, the crispier your chips will be. Aim for about 1-2mm thickness.

Place the thinly sliced sweet potatoes in cold water for at least 5 minutes to remove excess starch. This prevents them from sticking together during frying and ensures they become extra crispy. After soaking, drain the water completely.

Before frying the sweet potato slices, thoroughly pat them dry with a clean kitchen towel or paper towels. Any remaining moisture can cause dangerous oil splattering and prevent the chips from achieving optimal crispiness.
Step 5
Pour a generous amount of cooking oil into a frying pan or pot and preheat over medium heat to about 160-170°C (320-340°F). Once the oil is hot enough, add the sweet potato slices in batches, avoiding overcrowding the pan. Fry them until they turn golden brown and the edges start to look crispy. Remove them with a slotted spoon and drain on a wire rack to remove excess oil.

Freshly fried sweet potato chips are wonderfully crispy and savory! They’re delicious eaten warm, but can also be stored in an airtight container once completely cooled for enjoying later. For an extra treat, you can drizzle a little honey or corn syrup over them.
