  • 1 bowl of leftover cooked rice (approx. 150g)
  • 1 cup cooking oil (approx. 200ml)
  • Sugar, to taste

The first step to making crispy fried nurungji! Pour cooking oil into a spacious pan and heat it over medium-low heat. Once it’s hot, spread the leftover cooked rice evenly in a thin layer. It’s important to spread it without overlapping so that each grain of rice can toast evenly.

Heat control is key when toasting the rice! If you cook it over high heat, the rice will burn quickly and you won’t be able to bring out its savory flavor properly. Cook it slowly over low heat, patiently, until the rice grains turn into a savory and crispy nurungji. It’s ready when it develops a gentle golden-brown color.

Before frying, it’s much easier and results in a prettier finish if you cut the once-toasted nurungji into bite-sized pieces. Use scissors to cut it into long strips or squares as you prefer. The thinner you cut it, the crispier it will be.

Now for the frying process. Pour about 1 cup of cooking oil into a deep pan, preheat over medium heat, and then add the prepared nurungji pieces. Since they’ve already been toasted once, they don’t need to be fried for long. Fry them for about 10 to 15 seconds over medium heat. Be careful, as they can burn quickly if fried for too long!

Immediately place the fried nurungji on a plate lined with paper towels to drain off excess oil thoroughly. This will result in even crispier and lighter fried nurungji! Sprinkle generously with sugar while still warm for a sweet and savory nurungji cracker. It’s a fantastic snack for kids! Enjoy the wonderfully crispy texture and rich savory flavor.

Pour about 2 cups (approx. 400ml) of water into a pot, add about 4 pieces of the finished fried nurungji, and simmer over low heat for 20 minutes until a savory nurungji soup is complete.
