Ingredients
- 2 Tbsp dried shrimp powder
- 1/2 onion, thinly sliced
- 1/4 zucchini, thinly sliced
- 1/5 carrot, thinly sliced
- 1 large handful of chives, cut into 4-5cm lengths
- 1.5 Tbsp tempura powder (or frying powder)
- 1.5 Tbsp pancake mix (buchim garu)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare the dried shrimp powder. Lightly wipe the dried shrimp with a kitchen towel to remove any dust. You can grind them coarsely, leaving some texture, or grind them into a fine powder, depending on your preference. Mix the ground dried shrimp powder with the thinly sliced onion.
Step 2
Now, add all the prepared vegetables to the bowl. Include the thinly sliced zucchini, carrot, and chives cut into 4-5cm lengths. Mix them thoroughly with the onion and dried shrimp mixture.
Step 3
It’s time to make the batter. Combine the tempura powder and pancake mix in equal amounts (1.5 Tbsp each). Gradually add a very small amount of water, mixing until you achieve a thick batter consistency. Be careful not to add too much water, as this can make the pancake soggy. Finally, drizzle in 1 Tbsp of sesame oil for added flavor and mix lightly.
Step 4
Heat a pan over medium heat and add a generous amount of cooking oil. Spoon the batter onto the hot pan and cook until golden brown and crispy on both sides. A touch of sesame oil in the pan will release a wonderful nutty aroma, and the addition of dried shrimp adds a delightful seafood fragrance, making it even more delicious.
