Cooking Instructions
Step 1
Hello everyone! Today, I’ll be sharing a simple and easy recipe for making crispy and refreshing summer kkakdugi. You can make the kind of kkakdugi you enjoy at seolleongtang or gukbap restaurants right at home!
Step 2
The key feature of this recipe is that you don’t need to salt the radish beforehand. First, prepare one medium-sized radish, washed thoroughly. You can lightly peel the outer skin with a peeler or simply wash it very well. Then, cut the radish into bite-sized cubes, about 2-3 cm each. Place the cut radish in a large bowl.
Step 3
Now, let’s make the seasoning. To the radish in the bowl, add 3 Tbsp of gochugaru, 3 Tbsp of sugar, 3 Tbsp of vinegar, 3 Tbsp of fish sauce, 1 Tbsp of salt, and 3 Tbsp of minced garlic. Here’s a tip: if you mix the gochugaru with the radish first and let it sit for a moment, the radish will absorb the color more beautifully. After that, add the rest of the seasoning ingredients and mix well. It’s important to gently mix the ingredients so the seasoning coats the radish evenly.
Step 4
While you’re mixing the seasoning, thinly slice 1/2 onion and diagonally slice the green onion (mainly the white parts) to add extra crunch and flavor. Add the sliced onion and green onion to the seasoned radish, and mix everything together again thoroughly. Gently mix so all ingredients are evenly combined.
