Main Ingredients- 2/3 Korean radish (approx. 300-400g)
- A small amount of the white part of a green onion (approx. 10-15cm length)
Seasoning Ingredients- 4 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 2.5 Tbsp anchovy sauce
- 1 Tbsp vinegar
- 1.5 Tbsp sugar

Cooking Instructions
Step 1
Prepare 2/3 of a fresh Korean radish. A radish of about 300-400g is typically suitable.
Step 2
Wash the radish thoroughly, peel it, and then slice it into approximately 5cm lengths. After that, julienne it as thinly as possible. Using a julienne slicer makes it convenient, but if you’re using a knife, slicing thinly is crucial for maintaining a crispy texture.
Step 3
Add 4 tablespoons of fine gochugaru (Korean chili flakes) to the julienned radish. Let the chili flakes color the radish first.
Step 4
Gently mix the radish with the gochugaru. Be careful not to mash the radish as you mix, and let it sit for about 10 minutes. This allows the radish to release its moisture, which helps it soften slightly and absorb the seasonings better.

Wash the white part of the green onion and mince it very finely. The aroma of the green onion will blend with the seasonings and enhance the flavor.

To the radish that has been resting for 10 minutes, add the minced green onion and 1 tablespoon of minced garlic. The pungent flavor of garlic pairs wonderfully with the radish.

Add 1.5 tablespoons of sugar for sweetness. You can adjust the amount of sugar according to your preference.

Add 2.5 tablespoons of anchovy sauce for umami and 1 tablespoon of vinegar for a refreshing tang. Now, mix everything evenly to ensure all the seasonings are well combined. Avoid overmixing, as it can make the radish mushy; a gentle mix is key.
