Radishes are so versatile; they’re great in braises, fresh salads like this one, or even rolled up in rice wraps. This radish salad recipe is incredibly simple and easy, perfect for beginners. Radishes are known for being rich in Vitamin C and good for preventing colds. Fun fact: adding radish when boiling octopus makes it more tender and removes any gamey smell! This crunchy, fresh radish salad is divine when mixed with a spoonful of sesame oil into warm white rice. It’s the perfect dish when you have a poor appetite!

Essential Ingredients

  • 185g radish
  • 22g green onion
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp salt
  • 1 tsp sugar
  • 1 Tbsp sesame oil
  • 1 tsp toasted sesame seeds

Cooking Instructions

First, prepare the radish and green onion. Wash the radish thoroughly, peel it, and slice it into thin matchsticks. For the green onion, prepare about 22g. Since it can have a strong pungent flavor, I recommend using only half of it, thinly sliced. If you dislike the spicy taste of green onion or if children will be eating it, feel free to omit the green onion entirely.

Place the shredded radish and green onion into a bowl. Now it’s time to season. First, add 2 tablespoons of gochugaru and 1 teaspoon of salt, and gently mix them together. Mixing the radish with the chili flakes and salt first will give it a beautiful color and enhance its savory flavor. Once the radish is somewhat seasoned, add 1 teaspoon of sugar to introduce a touch of sweetness.

After mixing well with the sugar, finally add 1 tablespoon of sesame oil for a nutty aroma and 1 teaspoon of toasted sesame seeds. Give it one last gentle toss. This completes the basic seasoning for your radish salad. Taste it, and if it’s too bland, add a little more salt to adjust it to your preference. (Pro Tip: If you prefer a sweet and sour flavor, like in the Sumine Banchan recipe, add about 1/2 tablespoon of vinegar before adding the sesame oil and mix. In this case, omit the sesame oil.)
