I made these cabbage pickles specially for my husband who loves them with pizza! They’re so delicious, you’ll find yourself reaching for them constantly. This is a simple side dish that anyone can easily make with basic ingredients, perfect for when you need a little something to liven up your meal.

  • 120ml vinegar
  • 120ml sugar
  • 1 teaspoon salt
  • 240ml water

First, to enhance freshness and ensure hygiene, soak the cabbage in a vinegar-water solution for a short while to sanitize it. This step is crucial for preparing the cabbage cleanly.

Now, let’s make the delicious pickling brine. In a clean bowl, combine 120ml of vinegar, 120ml of sugar, 1 teaspoon of salt, and 240ml of water. Stir well until the sugar and salt are completely dissolved. Accurate measurements are important here for the best flavor.

Pour the well-mixed pickling brine into a saucepan and heat it. While the brine tastes good raw, gently heating it helps the ingredients meld together beautifully and improves its shelf life.

As soon as the brine begins to boil, turn off the heat immediately. Boiling it for too long can diminish the tangy flavor of the vinegar, so aim to bring it to a boil just once. This is the key to retaining that delightful sharpness.
