Main Ingredients

  • 100g unsalted butter
  • 85g brown sugar
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 130g cake flour
  • 1g cinnamon powder
  • 100g crispy oats
  • 30g sliced almonds
  • 50g dried cranberries

Cooking Instructions

Step 1

Proper ingredient preparation is key to perfect cookie dough. First, ensure your unsalted butter is softened at room temperature until it’s pliable enough to press with your finger. This will make creaming it much easier. Sift your dry ingredients (cake flour and cinnamon powder) together, preferably twice, to ensure a smooth, lump-free batter. If using dried cranberries, soak them in lukewarm water for about 5 minutes. This rehydrates them, making them softer and adding a touch of moisture to the finished cookies. After soaking, drain them well and pat them dry.

Step 1

Step 2

In a mixing bowl, cream the softened unsalted butter until it’s smooth and fluffy. Use a whisk or spatula, and make sure there are no lumps. This step is crucial for a good cookie texture.

Step 2

Step 3

Once the butter is creamy, add the brown sugar, a pinch of salt, and 1 teaspoon of vanilla extract. Mix well until everything is combined. Creaming the sugar with the butter helps create a lighter texture.

Step 3

Step 4

Add the room-temperature egg. It’s important that the egg is at room temperature to prevent the butter mixture from separating. Whisk the egg into the butter and sugar mixture quickly until just combined.

Step 4

Step 5

Add the sifted dry ingredients (cake flour and cinnamon powder) to the bowl. Using a spatula, gently fold the dry ingredients into the wet ingredients using a cutting motion until about 80% of the flour is incorporated. Be careful not to overmix, as this can lead to tough cookies. The goal is to just combine the ingredients.

Step 5

Step 6

When the dry ingredients are about 80% incorporated, add the crispy oats, the drained dried cranberries, and the sliced almonds. Gently fold these additions into the dough until they are evenly distributed. The dough will be quite chunky with all the additions.

Step 6

Step 7

Your delicious oatmeal cookie dough is now complete! You’ll see the oats, nuts, and cranberries studded throughout the mixture, promising a delightful cookie.

Step 7

Step 8

Line a baking sheet with parchment paper. Drop rounded portions of dough onto the prepared baking sheet using an ice cream scoop or tablespoon. Gently flatten each mound with your hand or the bottom of a glass to about 1 cm (or ½ inch) thickness. Leave enough space between cookies as they will spread slightly during baking.

Step 8

Step 9

Bake in a preheated oven at 180°C (350°F) for 13 to 15 minutes. The cookies are ready when the edges are golden brown and the centers look set. Baking times may vary depending on your oven. Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack. This ensures they achieve maximum crispiness.
