  • 3 Tbsp cooking wine (Mirin)
  • Pinch of salt
  • Pinch of ginger powder (optional, for enhanced flavor)

Cooking Instructions

Step 1

Let’s get started on making this nutritious and delicious Vitamin Greens Stir-fry!

Step 1

Step 2

Prepare 1 bag of fresh vitamin greens. If you’ve grown them yourself, this dish will be even more special! Wash them thoroughly under running water and drain well.

Step 2

Step 3

Chop the white parts of the leek into bite-sized pieces. The sweet aroma of leeks will greatly enhance the flavor of your stir-fry.

Step 3

Step 4

Heat a generous amount of cooking oil in a pan over medium-low heat. Add the minced garlic and a pinch of ginger powder, stirring until fragrant. Be careful not to burn the garlic.

Step 4

Step 5

Add the peperoncino, cut in half, to the fragrant garlic oil and stir-fry briefly. Once the spicy aroma rises, reduce the heat slightly. Feel free to add more peperoncino if you like it spicier.

Step 5

Step 6

In a separate bowl, combine the chicken stock (or water), cooking wine, and a pinch of salt. Mix well to create your seasoning broth. This broth will add a rich umami flavor to the stir-fry.

Step 6

Step 7

Add the prepared vitamin greens to the pan with the aromatic ingredients. Stir-fry over high heat until the greens are just wilted. Cooking them quickly helps maintain their crisp texture. Add the chopped leeks at this stage as well.

Step 7

Step 8

Once the greens are slightly cooked, pour in the prepared seasoning broth. Let it simmer and reduce slightly, allowing the greens to absorb the delicious flavors.

Step 8

Step 9

Just before turning off the heat, or after turning it off, sprinkle generously with toasted sesame seeds. The nutty flavor of sesame seeds elevates the dish. Gently mix everything together with a spatula.

Step 9

Step 10

Taste the stir-fry and if it needs more seasoning, add a tiny bit of salt at a time until it reaches your desired taste. It’s important to let the natural flavor of the vegetables shine through.

Step 10

Step 11

Your crispy and flavorful Vitamin Greens Stir-fry is ready! Enjoy it as a healthy and satisfying meal with a bowl of warm rice.
