Spring Cabbage Salad Ingredients- 4 heads of fresh spring cabbage
- 1 large green onion (scallion)
Spring Cabbage Salad Dressing- 5 Tbsp fish sauce (anchovy or similar)
- 3 Tbsp soy sauce (Jwinikong soy sauce or similar)
- 3 Tbsp tuna extract (or seafood broth concentrate)
- 5 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp minced garlic
- 1 Tbsp minced ginger
- 3 Tbsp sugar
- 1 ladleful of plum extract (approx. 100ml)
- 5 Tbsp sesame oil
- Sesame seeds to taste
- 5 Tbsp fish sauce (anchovy or similar)
- 3 Tbsp soy sauce (Jwinikong soy sauce or similar)
- 3 Tbsp tuna extract (or seafood broth concentrate)
- 5 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp minced garlic
- 1 Tbsp minced ginger
- 3 Tbsp sugar
- 1 ladleful of plum extract (approx. 100ml)
- 5 Tbsp sesame oil
- Sesame seeds to taste
Cooking Instructions
Step 1
It’s convenient to have minced garlic (3 Tbsp) and minced ginger (1 Tbsp) prepped. I like to portion and freeze mine, then use them as needed. This keeps them fresh for longer and speeds up cooking time.
Step 2
For the dressing, combine the fish sauce (5 Tbsp), soy sauce (3 Tbsp), tuna extract (3 Tbsp), gochugaru (5 Tbsp), sugar (3 Tbsp), and plum extract (1 ladleful). Add the prepped minced garlic (3 Tbsp) and minced ginger (1 Tbsp). Finally, sprinkle in sesame seeds as desired. For now, set aside the fragrant sesame oil to add at the very end.
Step 3
Wash the green onion thoroughly, then cut it in half lengthwise. Slice it thinly on an angle (about 0.5 cm thick). This way of cutting ensures it mixes well with the cabbage and looks appealing. Toss the sliced green onion with the prepared dressing.
Step 4
Wash the spring cabbage and drain it very well. Cut it into bite-sized pieces. You can slice the thicker stem parts and leave the leaves larger if you prefer. Add the well-drained spring cabbage to the dressing mixture. Gently toss everything together with your hands, ensuring the dressing coats the cabbage evenly. Be careful not to mix too vigorously, as this can bruise the cabbage.
Step 5
Once all the ingredients are well combined with the dressing, it’s time for the final touch: drizzle in the sesame oil (5 Tbsp). The nutty aroma of the sesame oil will elevate the flavor of the spring cabbage salad, making it even richer and more delicious. Give it one last gentle toss to incorporate the sesame oil.
