Fresh Ingredients
  • 1 head of Napa Cabbage (medium size)
  • 1 bunch of Scallions (about 5-7 stalks)

Golden Ratio Seasoning
  • 3 Tbsp Fish Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Salted Shrimp (finely minced)
  • 1 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • 5 Tbsp Red Pepper Flakes (adjust to taste)
  • A pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, wash the fresh Napa cabbage thoroughly. Trim the very bottom part and then separate the leaves. You can either cut the leaves into bite-sized pieces or quarter or sixth the head. Sprinkle generously with coarse sea salt and toss to coat evenly. Let it wilt and soften for about 30 minutes, tossing once or twice in between to ensure even salting.

Step 2

After salting, rinse the cabbage 2-3 times under cold running water to remove excess salt. Drain the cabbage well in a colander, or gently squeeze out as much water as possible with your hands. It’s crucial to remove as much water as you can, as excess moisture will dilute the flavor of the Geotjeori.

Step 3

Now, let’s make the delicious Geotjeori seasoning sauce. In a large bowl, combine 3 Tbsp of fish sauce, 1 Tbsp of minced garlic, 1 Tbsp of finely minced salted shrimp, 1 Tbsp of sugar, 1 Tbsp of corn syrup, and 5 Tbsp of red pepper flakes for that perfect kick. Mix everything well. (If you like it spicier, feel free to add more red pepper flakes). These measurements are based on standard Korean soup spoons.

Step 4

Gather the drained Napa cabbage, the chopped scallions, and the prepared seasoning sauce. If you like, you can chop the scallions into 3-4 cm lengths and mix them with the sauce beforehand. Have all your components ready for easy mixing.

Step 5

Now, it’s time to gently mix everything together. Use your hands to carefully toss the ingredients, ensuring the cabbage doesn’t get bruised and retains its crispness. Make sure the seasoning coats every piece of cabbage evenly. Finish by sprinkling a pinch of sesame seeds on top for a nutty aroma. The Geotjeori is delicious right away, but chilling it in the refrigerator for a short while will enhance the flavors even further.
