Also known as ‘garlic heart stalk’ or ‘garlic sprout,’ garlic scapes are the edible flower stems of fully grown garlic. They possess a characteristic pungent flavor, similar to garlic, but with a less intense aroma, making them ideal for dishes where you can enjoy a larger quantity, such as seasoned vegetables. They retain about 70% of garlic’s beneficial properties and are richer in beta-carotene, an antioxidant, compared to garlic. Furthermore, they are abundant in vitamins E, C, and K, as well as essential amino acids. This recipe creates a delightful and refreshing jangajji (Korean pickled dish) by using only soy sauce and plum extract, without any vinegar, allowing the natural fragrance and crisp texture of the garlic scapes to shine. It’s a perfect side dish for rice or a simple accompaniment to drinks.

Pickled Garlic Scapes Ingredients

  • 250g fresh garlic scapes
  • 150ml water (approx. 3/4 cup)
  • 150ml soy sauce (approx. 3/4 cup)
  • 150ml plum extract (sweet plum syrup, approx. 3/4 cup)

Cooking Instructions

First, prepare the fresh garlic scapes. Trim off any tough ends or wilted leaves, then rinse them thoroughly under running water and pat them dry. Now, cut them into manageable pieces. Typically, cutting them into 4-5cm lengths makes them easy to store and eat.

Let’s make the sweet and savory pickling sauce! In a pot, combine 150ml of water, 150ml of soy sauce, and 150ml of sweet plum extract. Bring to a simmer over medium heat. Stir occasionally until the sugar dissolves and all ingredients are well combined. Once the sauce comes to a boil, let it simmer for another 1-2 minutes, then turn off the heat and let it cool slightly. This step helps the flavors penetrate the garlic scapes effectively.

Prepare a clean, sterilized glass jar or an airtight container. Arrange the cut garlic scapes neatly inside the container. Avoid packing them too tightly, as leaving a little space will allow the sauce to seep in more easily.

Now it’s time to pour the carefully prepared pickling sauce over the garlic scapes. Pour the sauce generously until the garlic scapes are completely submerged. Gently shake the container or lightly press down with chopsticks to ensure the sauce permeates through the scapes. Submerging them fully prevents air contact, keeping them fresh for longer storage.
