Radish Salad Ingredients

  • 450g radish (about 1/3 of a medium radish)
  • 2 Tbsp coarse salt

Radish Salad Seasoning

  • 2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 2 Tbsp rice vinegar (adjust acidity)
  • 2 Tbsp oligo syrup or corn syrup (for gloss and sweetness)
  • 1.5 Tbsp fish sauce (anchovy or sand lance, for umami)
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds or toasted sesame seeds (for nutty flavor)

Cooking Instructions

Prepare a fresh radish. Wash the radish thoroughly, then peel the skin with a peeler or a knife. Cut the radish into strips about 4-5 cm long. Using a mandoline slicer will make this process faster and more uniform. Thicker julienne cuts will result in a better texture.

Add 2 tablespoons of coarse salt to the julienned radish and gently mix by hand. Let it sit for about 10 minutes to pickle. Salting the radish draws out excess moisture, which helps maintain its crispiness.

While the radish is pickling, let’s make the delicious seasoning! In a bowl, combine 2 tablespoons of gochugaru, 2 tablespoons of rice vinegar, 2 tablespoons of oligo syrup, 1.5 tablespoons of fish sauce, and 1 tablespoon of minced garlic. Mix well. Finally, add a pinch of sesame seeds for a nutty aroma.

After 10 minutes, rinse the salted radish lightly under running water. Drain thoroughly in a colander, squeezing out as much water as possible. Squeezing well will help the seasoning adhere better and prevent the radish from becoming mushy. Add the squeezed radish to the seasoning mixture and gently toss to coat. Avoid over-mixing, as it can make the radish break apart.

The well-mixed radish salad is delicious to eat immediately. You can also store it in an airtight container in the refrigerator for 2-3 days. Serve it in small bowls as needed to maintain its crispiness. It’s incredibly tasty served over a bowl of warm rice!
