Recently, I made this fragrant stir-fried radish with perilla oil using leftover radish from making radish kimchi. Stir-fried until slightly crisp, it makes a delightful side dish for rice. Main Ingredients

  • 400g radish
  • 15cm green onion
  • 0.7 Tbsp minced garlic

Salting the Radish

  • 1 Tbsp coarse sea salt (flower salt)

Seasoning and Stir-frying

  • 2 Tbsp perilla oil
  • 1/3 cup kelp broth (or water)
  • 1 Tbsp tuna extract (or soy sauce/salt)
  • Pinch of black pepper
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the radish. When julienning the radish for this dish, it’s best to cut it into moderately thick strips rather than very thin ones, as this will result in a better texture when cooked. (Tip: Avoid slicing the radish too thinly, as it can easily break apart!) Instead of tuna extract, you can use soy sauce or salt, but tuna extract helps maintain a lighter color for the radish dish compared to dark soy sauce. Tuna extract adds a nice umami depth, so keep that in mind.

Add 1 tablespoon of coarse sea salt (flower salt) to the julienned radish and mix well to salt it. You want to lightly salt it to soften the radish slightly, rather than making it very salty. Using coarse sea salt helps to draw out moisture without making it too intensely salty. Salting the radish beforehand like this is key to preventing it from breaking apart during cooking and allows it to cook faster and more evenly. Let it salt for about 10 minutes.

Do not rinse the salted radish. Heat 2 tablespoons of perilla oil in a pan. Add the salted radish directly to the pan and begin to stir-fry. The nutty aroma of the perilla oil will blend beautifully with the radish, enhancing its flavor.

Once the radish starts to turn slightly translucent, add 0.7 tablespoon of minced garlic and stir-fry together until fragrant. When the garlic aroma is released, pour in 1/3 cup of kelp broth. If you don’t have kelp broth, plain water or anchovy broth can be used. Adding broth will help the radish cook through evenly and absorb the seasoning better.

To prevent the radish from becoming mushy, it’s best not to stir it too frequently. Cover the pan with a lid and cook over medium heat for about 5-7 minutes, or until the radish is tender. Once the radish is cooked, add a pinch of black pepper to taste and 1 tablespoon of toasted sesame seeds for a nutty finish.

Finally, add the chopped green onion (about 15cm) and gently mix. This completes your delicious stir-fried radish. The subtle sweetness and aroma of the green onion will further enhance the overall flavor of the dish.
