Potatoes are incredibly tasty right now! I made my go-to potato stir-fry with a wonderfully crisp texture. 🙂

Main Ingredients

  • 2 medium potatoes
  • 1/2 medium onion
  • A little carrot (about 1/4)

Cooking Instructions

Step 1

First, peel the potatoes, onion, and carrot. Then, julienne all the vegetables into bite-sized strips. For the potatoes, cut them into strips about 0.5 cm thick to prevent them from breaking apart while cooking. Julienne the onion and carrot to a similar thickness. Soak the julienned potatoes in lukewarm water for about 10 minutes to remove excess starch and to mellow the sharpness of the onion. The carrot is added for color.

Drain the potatoes, onion, and carrot on a sieve, shaking off as much water as possible. Patting them dry with a paper towel will help prevent oil splattering when frying and achieve a crispier result.

Heat a wok or frying pan over medium-low heat and add 2-3 tablespoons of cooking oil generously. Cooking over medium-low heat, rather than high heat, ensures the ingredients cook evenly without burning.

Add the drained potatoes, onion, and carrot to the pan. Stir-fry over medium heat until the vegetables are cooked through. Once the potatoes start to look translucent, add 3 pinches of salt to season. Adjust the salt according to your taste.

When the potatoes are cooked and have reached your desired crispness, turn off the heat. Finally, stir in 1/2 tablespoon of sesame oil, a pinch of black pepper, and a sprinkle of sesame seeds. Gently toss everything to combine in the residual heat of the pan. This completes your delicious and aromatic stir-fried potatoes!
