Ingredients

  • Fresh Rapini (Choy Sum) 250g
  • Pork strips for stir-fry 180g
  • Dried red chilies 3 (add more for extra spice)
  • White part of a leek 10cm
  • Garlic 3 cloves
  • Ginger 3g (about 1/2 tsp)
  • Oyster sauce 1 Tbsp
  • Water 5 Tbsp
  • Vegetable oil 2 Tbsp
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

Step 1

Wash the rapini (Choy Sum) thoroughly under running water. Trim any wilted leaves or rough ends. Make a small slit at the base of the stems to help them absorb flavors better.

Cut the rapini into bite-sized pieces, about 5cm long. Cutting them in half or into thirds will make them easier to stir-fry.

Thinly slice the white part of the leek. Finely julienne the ginger. Slice the garlic thinly. Crumble the dried chilies, removing the seeds if you prefer less heat.

In a bowl, season the pork strips with a pinch of salt and black pepper. Gently mix to coat the pork. This marinating step enhances the flavor.

Heat a wok or large skillet over medium heat and add 2 Tbsp of vegetable oil. Add the sliced leek, garlic, and ginger. Stir-fry for about 2 minutes until fragrant, infusing the oil with their aromas.

Add the marinated pork and crumbled dried chilies to the wok. Continue to stir-fry for another minute, or until the pork is no longer pink. The chilies will add a pleasant spicy kick.

Now, add the thicker stems of the rapini first, followed by 5 Tbsp of water. Cover the wok and stir-fry for about 4 minutes, allowing the rapini stems to soften slightly.

Finally, add the rapini leaves and 1 Tbsp of oyster sauce. Increase the heat to medium-high and stir-fry briskly for about 1 minute and 30 seconds until everything is well combined and the leaves are tender-crisp. This quick stir-fry ensures the rapini retains its fresh crunch and vibrant color.
