While strolling through a large supermarket on my way home, I found myself browsing. I wasn’t specifically looking for anything, just window shopping! You know how it is, right? Even when you don’t plan to buy much, you end up with a basket full. But today, I kept it simple. Vegetable prices were quite high, so I couldn’t buy much. Instead of veggies, I bought a pack of chicken gizzards – they were quite affordable! After buying just the gizzards, my usual tofu, and a bunch of bananas, what delicious dish did I make upon arriving home? The first thing that comes to mind when thinking of chicken gizzards is stir-fried gizzards! They make a fantastic accompaniment to drinks, and even though I don’t drink, my parents enjoyed them with their beverages. They even told me to give them a heads-up next time so they could be prepared with their drinks! So, let me share how to make delicious stir-fried chicken gizzards right now.

Main Ingredients

  • 400g chicken gizzards
  • 1.5 cups cooking oil (for deep-frying gizzards)
  • 2 Korean green chili peppers (Cheongyang)
  • 1 red chili pepper
  • 15 cloves garlic
  • 1/3 stalk of green onion
  • 1/2 onion

Cooking Instructions

Step 1

First, rinse the chicken gizzards thoroughly under running cold water to remove any impurities. After washing, drain them well in a sieve; this is crucial to remove excess water, as it can cause oil splattering when frying.

Once drained, cut the chicken gizzards into manageable pieces, about 2 to 3 lengthwise segments. Cutting them too small might affect their chewy texture after cooking.

Slice the green onion into approximately 5cm lengths. If the stalk is thick, you can halve it lengthwise before cutting to ensure even cooking and better sauce absorption.

For the garlic, you can use whole cloves, but larger ones can be halved. Halving them will make them more fragrant and delicious when fried, and they’ll retain a pleasant bite.

Slice the onion into strips about 0.5cm thick. If they are too thin, they might become mushy when stir-fried, so aim for a moderate thickness.

Slice the Korean green chilies and red chilies diagonally about 1cm apart. This adds a beautiful color and a pleasant spicy aroma, enhancing the overall flavor of the dish.

Now, it’s time to fry the gizzards. Pour about 1.5 cups of cooking oil into a pan and preheat it over medium heat. Once the oil is moderately hot, carefully add the prepared chicken gizzards and fry until they turn golden brown. The key is to fry them until the outside is lightly cooked.

When the chicken gizzards are about halfway cooked, add the minced garlic and continue frying together. Be careful not to burn the garlic. Frying it alongside the gizzards infuses the gizzards with the garlic’s wonderful aroma.

Once the gizzards and garlic are nicely browned, add the sliced green onion and fry briefly just to release its fragrance. Be mindful not to overcook, as the green onion can burn quickly.

Once seasoned, drizzle in 1 tablespoon of sesame oil. This adds a glossy sheen and a rich, nutty flavor. Stir-fry for another moment over high heat to fully incorporate the aroma.
